The Indian Onion Masala is a flavourful blend of onions, tomatoes, ginger-garlic & spices. This no-tomato version of Paneer Masala is a simple step-by-step recipe for a delicious serving of Paneer.
With the soaring Tomato prices, I try to avoid tomatoes in my recipes. I wanted to cook something quick for chapatis and was super lazy to step out to buy some tomatoes and put together ingredients I had on the counter.

Ingredients:
- 2 tbsp Oil
- 2 Sprigs Curry Leaves
- 1 Bay Leaf
- Purée of 2 Large Onions
- 3 Green Chillies, Slit
- ¾ tsp Turmeric Powder
- 1 ½ tsp Chilli Powder
- ½ tsp Garam Masala
- 1 tsp Salt
- 300 gms Paneer
- ½ tsp Dried Kasuri Methi leaves (optional)
- ½ cup Vegetable Stock


Preparation:
- In a pan, heat oil, add green chillies, curry leaves and bay leaves and sauté for a few seconds.
- Add the onion purée and fry till light brown.
- Add the ginger garlic paste and sauté for a few seconds. Add the turmeric, garam masala and chilli powder.
- Add a little vegetable stock, if required for gravy.
- Add the fried paneer and cook on low flame for 15 minutes – 20 minutes.
- Garnish with roasted kasuri methi.
