Paneer Masala

The Indian Onion Masala is a flavourful blend of onions, tomatoes, ginger-garlic & spices. This no-tomato version of Paneer Masala is a simple step-by-step recipe for a delicious serving of Paneer.

With the soaring Tomato prices, I try to avoid tomatoes in my recipes. I wanted to cook something quick for chapatis and was super lazy to step out to buy some tomatoes and put together ingredients I had on the counter.

Servings: 3

Ingredients:

  • 2 tbsp Oil
  • 2 Sprigs Curry Leaves
  • 1 Bay Leaf
  • Purée of 2 Large Onions 
  • 3 Green Chillies, Slit
  • ¾ tsp Turmeric Powder
  • 1 ½ tsp Chilli Powder
  • ½ tsp Garam Masala 
  • 1 tsp Salt
  • 300 gms Paneer
  • ½ tsp Dried Kasuri Methi leaves (optional)
  • ½ cup Vegetable Stock 


Preparation:

  • In a pan, heat oil, add green chillies, curry leaves and bay leaves and sauté for a few seconds.
  • Add the onion purée and fry till light brown.
  • Add the ginger garlic paste and sauté for a few seconds. Add the turmeric, garam masala and chilli powder.
  • Add a little vegetable stock, if required for gravy.
  • Add the fried paneer and cook on low flame for 15 minutes – 20 minutes.
  • Garnish with roasted kasuri methi.
